Lakeville Man Charged After Alleged Hotel Stabbing at Quality Inn; Prosecutors Say More Serious Charges Could Be Considered

LAKEVILLE, MINNESOTA: A 35-year-old man is facing a felony assault charge after prosecutors allege he stabbed a coworker in the neck with a knife and assaulted another coworker during an incident inside a Lakeville hotel room.
According to a criminal complaint filed in Dakota County District Court, Humberto Diaz Perez, of Lakeville, has been charged with one count of Second-Degree Assault (Dangerous Weapon), a felony punishable by up to seven years in prison, a fine of up to $14,000, or both.
The alleged assault occurred on Thursday, July 2, 2026, at the Quality Inn in Lakeville.
Victim Suffered Neck Laceration
According to the complaint, officers with the Lakeville Police Department responded to the hotel after receiving a report of a stabbing. When officers arrived, they located Victim 1, who had suffered a laceration to the front of his neck below his chin.
The victim told officers he had been drinking with several coworkers inside a hotel room when one of the men suddenly grabbed a knife and stabbed him in the neck. The victim identified the alleged attacker only as "Humberto," who investigators later identified as Humberto Diaz Perez.
The victim also reported that another coworker attempted to help him after the stabbing but was then attacked as well.
Second Victim Allegedly Punched Unconscious
Investigators also interviewed a second victim, Victim 2, who told officers Diaz Perez punched him in the face after stabbing the first victim. The second victim said the group had been drinking together in Room 205 when the violence erupted.
According to the complaint, Victim 2 told investigators that Diaz Perez's brothers, who were also present, pulled him from the room and into either Room 206 or Room 207 following the assault.
Officers observed visible injuries to the second victim, including swelling to the head, a cut above the left eye with bruising, a bleeding cut on the bridge of the nose, and blood covering portions of his clothing
Paramedics also told officers the victim reported he had lost consciousness after being punched and could not remember what occurred for a period of time afterward.
Search Warrant Leads to Discovery of Multiple Knives
Court documents state investigators learned multiple individuals connected to the incident were staying in several adjacent hotel rooms, so police obtained a search warrant covering the block of rooms involved.
Inside Room 205, officers documented what they described as a large amount of blood. During searches of the rooms, investigators recovered multiple knives. According to the complaint, an officer searching Room 206 noticed part of a carpet baseboard appeared disturbed. Behind the baseboard, officers allegedly discovered a red-handled utility razor knife.
The criminal complaint does not specify whether investigators have conclusively identified that knife as the weapon used in the alleged stabbing.
Prosecutors Say Investigation Continues
Although Diaz Perez is currently charged with a single count of second-degree assault, prosecutors indicated the case remains under active investigation. According to a prosecution request filed with the court, "additional investigation is ongoing related to more serious severity charges."
The filing also notes that all parties involved were reportedly consuming alcohol at the time of the incident, raising additional public safety concerns cited by the State.
Bail and Release Conditions
Prosecutors initially requested bail be set at $100,000 without conditions or $80,000 with conditions.
However, a release order filed July 6 shows the court ultimately authorized Diaz Perez's release on $80,000 bail without conditions or $60,000 with conditions, a reduction from the prosecution's requested amounts.
The criminal charge represents an allegation, and all defendants are presumed innocent unless and until proven guilty in court. The Lakeville Police Department continues to investigate the incident, and prosecutors have indicated additional or more serious charges remain possible depending on the outcome of that investigation.
